Come on a little walk with me..

Every once in awhile (usually when I notice my camera has been sitting in it's bag way to long) I grab my camera, head outside for a walk and I stop at random things and take pictures of them.
So come along and join my on my walk... :)

 
 







I figured this would be a cool spot for pictures ....if only I had another human with me! :) (yes the thought did cross my mind to try to take a selfy but I figured it would be more work then it would be worth! :)

I found this cool big M, and again I was tempted to try to get a selfy cause well M stands for MEGAN! :) But considering the fact that it was behind a school, and there was construction workers near by I decided not to embarrass myself and continued to walk by :)

Enchilada Soup

I have been wanting to start trying new recipes for awhile now, I am one of those gals that don't try alot of new recipes, once I find a few good recipes I tend to just stick to those. But I am trying to change that! :) So this week I was determined to try something new and I am really glad I did cause this soup is probably one of my new favorites now!! 

The weather is getting chiller, today the snow is falling. So what could be better then a nice bowl of warm soup?

 
 
 Ingredients
  • 6 cups Veggie Broth
  • 1 Diced Onion
  • 3 cups Cooked Beans (I’m using pinto and black beans)
  • 1 Diced tomatoes (canned are fine)
  • 1 8 oz can tomato sauce
  • 2 cloves garlic (or 1 tsp garlic powder)
  • 1 diced bell peppers
  • 1 sliced jalapeno
  • 2 cups cooked rice
  • 1 cup corn (or 1 drained can)
  • 1 small can diced green chilis
  • 1 Tbsp chili powder
  • 1/2 tsp cumin
  • salt to taste
  • pepper to taste

Directions
  1. Bring veggie broth to boil in a large pot.
  2. Add onions, cooked beans, diced tomatoes, bell peppers, jalapenos, corn and rice.
  3. Add tomato sauce and let simmer.
  4. Let this cook until onions are translucent and flavors have had a chance to meld. I like to simmer my soup for an hour or so.
  5. Season with chili powder, cumin, salt and pepper.
I didn't have Corn or green chilis or cumin and it still tasted amazing!!

Maternity Shoot!

I am kinda super excited to share these photo's with you, it is the first time (besides our wedding) that Henry and I have gotten a photographer to take our photo's (usually we use our trusty old tripod :). So we hired the best of the best, Henry sister Joanna. She did an amazing job, but I don't have to tell you that you can see that for yourself.

I had a hard time picking my favorites, cause I had to many... :) So I just decided to post a lot of pictures!
